How would you go about making this design larger? What would be the stitch numbers for a higher aida count fabric? Thank you!

If y ouwanted to stitch it on a higher count fabric, you could always make 4 stitches in a square for every stitch shown on the chart. Or you could stitch it on a lower count fabric and it would be made larger automatically that way.
You could always repeat the border too – just line your outer border up with the inner one and then repeat the corners. That would add height and width to the design.
